Post Easter food

A little detour from the looming General Election and what it ‘May’ mean for us, I made these autoimmune beauties this morning! After a fab Easter weekend of entertaining visiting friends, I find there’s never enough veg when eating out, so myself and the bf have been craving veg and all the good stuff this week!

This DIY breakfast was totally delicious! Avocado, pomegranate and sesame seeds on Rude Health organic buckwheat and rice multigrain crackers to start the day! Very filling too! I try to feed my autoimmune body, rather than eating just any old crap for the sake of it. This breakfast is also a lot more nutritious than the old school cereal or toast breakfast! Nowadays avocados and pomegranates are called ‘superfoods’ so here’s a little bit of the science bit…

Total antioxidant strength of pomegranate fruit measured regarding its oxygen radical absorbance capacity (ORAC) is 2341 µmol TE/100 g.
They are also good source of antioxidant vitamin-C, provides about 17% per 100 g of the daily requirement.
